INGREDIENTS

  • 250 grams small potatoes
  • ½ tsp cumin seeds (Jilakarra)
  • 1 tbsp oil
  • ½ tsp mustard seeds (Aavalu Ginjala)
  • ¼ cup sliced pearl onions (Ullipayalu)
  • ¼ tsp turmeric powder (Pasupu poḍi)
  • ¼ tsp red chili powder (Karam)
  • 6 to 7 curry leaves (Karivepaku)
  • Pinch of asafoetida (Inguva)
  • 1 tsp sambar powder.

PREPARATION/METHOD

  • U have to select small size potatoes for this curry, Clean the potatoes and boil in cooker till 2 whistles.
  • After pressure is out open it and peel(remove) the skin and keep it a side.
  • Take Pan and heat 1 tbsp sesame oil.
  • Add the mustard seeds(Aavalu Ginjala), cumin seeds(Jilakarra) fry untill it turns light brown.
  • Add sliced onions, curry leaves(Karivepaku) and a pinch of asafoetida(Inguva).
  • Now add peeled potatoes, spice powders – ¼ tsp turmeric powder, ¼ tsp red chili powder, 1 tsp sambar powder, salt. Mix in such a way that they coat the potatoes evenly.
  • Keep to 5 minutes on a low flame.
  • Add chopped coriander leaves. switch off the flame.
  • Baby Potato Fry Curry is ready to serve.
